How to store your pecans
Although they are available throughout the year, fresh pecans are usually at their peak during the first 3 weeks after the harvesting season in Autumn. After that they very slowly begin their decline into rancidity.
Unshelled pecans will keep for up to 3 months, provided they are properly stored at room temperature. Once they have been shelled, in a sealed container, they will keep for up to 6 months in the refrigerator or up to a year in the freezer. Pecans can be frozen shelled or unshelled.
Due to their high oil content, it is best to buy pecans in their shell, as they turn rancid quicker than other nuts with a lower oil content. Always keep shelled pecans in a closed container, otherwise they will absorb odours and flavors.
We use Foodfresh gas
In order not to damage the shelled pecan nuts during packaging due to the pressure of the vacuum we use a system that replaces the air with foodfresh gas. A special gas that contains a mixture of carbon dioxide specially for nuts. The pressure is carefully controlled in order to maintain the shape of the packaging and to avoid damaging the nuts
The foodfresh gas further prevents the nuts from going rancid. Light exposure is controlled by high quality closed packaging products. To much light exposure deteriorates the oils inn the pecan nuts.
High temperatures also reduces the quality of pecan nuts and thus we keep the nuts under 10℃ after harvesting. Once the nuts are packaged they are kept at 5℃ to prolong shelf-life.

Shelf life / Storage
Sealed and kept below 5℃: 2 years
Opened and kept below 5℃ : 6 months
Opened and kept at room temperature 20℃: 2 months
Pecan Nuts are best kept in a cool, dry place and away from direct sunlight.
